Passion must be lived and shared. I'm lucky to be able to do both with beer. I often think of chefs, painters and musician living a similar adventure. A painter touches up, deletes, isn't satisfied, adds another coat, works, has doubts, decides and then finds… For us craft brewers it's pretty much the same : beers as I think them up evolve in my mind, on my palate. Fro one brew to the next, I may adjust the hopping, change one malt type or the other, add a touch of sharpness, alter the fermentenation temperature or the quantity of yeast I pitch the brew with…
Yes, I'm happy with my beers, but never 100% so. Sometimem I'm not where I would like to be and that pushes me forward, on and on. It's pretty much the same in deveoping and organising my business, seeking for new markets. Many facets to a golbal evolotion and a permanent challenge that gives me the energy and the will to go on.
